Cornish Game Hen and Winter Salad Recipe 

We are well into the cold and rainy season in the Pacific Northwest and I don’t know about you, but I am craving all things warm and cozy.  Normally I consider myself a home cook aficionado, but these days, by the time dinner rolls around I have pretty much lost all desire to do anything aside from put on sweatpants (athletic attire to sweatpants is life these days).  I guess you can say that all the togetherness has me lacking motivation or something like that.  Regardless, healthy eating that is also delicious is still a priority so I am constantly on the hunt for recipes that fit this bill.  

Enter this Cornish Game Hen recipe.  In my house we refer to these little hens as “baby dragons”. No clue where this came from, something funny my husband came up with in order to make the kids feel excited to dig into them. Apparently this tactic has worked because my kids gobble these suckers up. I kid you not, each kid will easily polish a half hen all by themself.  Something about these being a little smaller than regular chicken keeps them oh so moist and juicy. They are super easy too! Just quickly prep and then let the oven take care of the rest of the work.  The hens pair well with so many different sides, but my favorite these days is a hearty winter salad that is topped with apples, pears, pecans, feta and roasted sweet potatoes. I love to make these sweet potatoes early on in the week and use them for multiple meals. They are so great to throw in a breakfast scramble, on salads, or a side at dinner. Cornish Game Hens With Winter Salad

Ingredients

  • 2 Game Hens (plan 1/2 per person)

  • 1 Tablespoon of olive oil per hen

  • Italian seasoning to coast

  • Garlic salt and pepper to coat

  • For the Salad
  • 1 cup roasted sweet potatoes

  • 1 pear chopped

  • 1 apple chopped

  • 1/2 cup feta

  • 2 TBSP chopped pecans

  • 1/4 cup chopped red onion

  • 4 cups mixed greens

  • For the Dressing
  • 1/4 cup olive oil

  • 1 TBSP Balsamic Vinegar

  • 1 TBSP Lemon Juice

  • 1 tsp mustard

  • 1 clove minced garlic

  • salt and pepper to taste

Directions

  • Preheat oven to 425. Baste hens with olive oil. Sprinkle to coat with italian seasoning, garlic salt and pepper.
  • Place breast side up on oven. Roast for 15 minutes, then reduce heat to 375 and continue roasting for 45 min or until internal temperature reaches 165 degrees.
  • Remove from oven and loosely cover with foil for 10 minutes before cutting and serving.
  • For The Salad
  • Place lettuce in large bowl.
  • Chop apple, pear, and onion
  • Mix in feta, and pecans
  • Mix all dressing ingredients and pour over salad
